Potato and Leek Soup II

Ingredients

Directions

Prepare

  1. Wash the leeks thoroughly in water to remove dirt and grit, then drain.

Make the soup

  1. Melt the butter in a large pot over medium heat. Add the vegetables, and season with a pinch each of salt and pepper. Stir to coat everything well with butter.

  2. Cover the pot, and let the vegetables sweat over low heat for 10 minutes—make sure not to let them brown.

  3. Stir in the chicken stock, and bring the pot to a boil. Simmer until the vegetables are cooked through.

Blend and finish

  1. Working in batches if necessary, purée the mixture using a hand- or full-size blender.

  2. If you would like a very smooth soup, work the puréed mixture through a sieve into a clean pot—this is laborious, but it yields a velvety product.

  3. Taste the soup, and season to taste with additional salt and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leeks
Softens into sweet, mild body that gives the soup its base flavour and texture.
Potatoes
Starch thickens the soup and gives it a creamy, body-rich texture when puréed.
Butter
Fat carries flavour and helps the vegetables soften gently in the pot.
Onion
Adds savoury sweetness and aroma as it softens into the base.
Chicken stock
Liquid that cooks the vegetables and forms the body of the soup.

The step that matters

Sweating the vegetables without browning. Keeping the vegetables pale over low heat lets them soften and release sweetness gently. Browning would add roasted, bitter notes that change the soup's clean, mild flavour.
