Ingredients

Directions

Prepare

  1. Rinse the fish fillets under cold water and pat them dry with paper towels.

  2. Cut the fish fillets into medium-sized pieces and set aside.

  3. Combine the rice with enough water to cover it completely and let it soak for about 15 minutes.

  4. Drain the water from the rice.

Cook

  1. Heat the olive oil in a large skillet or frying pan over medium heat.

  2. Add the finely chopped onion and minced garlic to the skillet and sauté until the onions become translucent and the garlic fragrant.

  3. Add the drained rice to the skillet and stir well to coat the rice with the onion and garlic mixture.

  4. Pour in the tomato sauce and add the ground cumin, ground paprika, ground coriander, salt, and black pepper. Stir to combine the ingredients and distribute the spices evenly.

  5. Place the fish fillets on top of the rice mixture in the skillet.

  6. Cover the skillet with a lid and let the dish simmer on low heat for about 20–25 minutes, or until the fish is cooked through and the rice is tender.

Finish and serve

  1. Remove the skillet from the heat and let it rest for a few minutes.

  2. Garnish the sayadeya with chopped fresh parsley.

  3. Serve hot, accompanied by lemon wedges for squeezing over the fish and rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White fish fillets
Provides the main protein, which cooks through gently on top of the rice.
Rice
Absorbs the tomato and spice liquid as it simmers, becoming tender and flavourful.
Onion
Softens as it cooks, adding sweetness and a savoury base to the dish.
Garlic
Becomes fragrant in the hot oil, adding aroma to the base.
Tomato sauce
Supplies liquid for the rice to cook in, along with acidity and colour.
Olive oil
Carries the aromatics and helps the rice coat evenly, adding fat and richness.

The step that matters

Simmer covered on low heat. Rice needs enough liquid and gentle, steady heat to cook through without scorching. Keeping the lid on traps steam so the rice turns tender and the fish cooks evenly.
