What each ingredient does

Pork rib chops
Main protein that becomes tender during long, gentle slow cooking.
Dried apple rings
Add sweetness and fruity flavour as they soften in the cooking liquid.
White wine
Lifts browned bits from the skillet, adding acidity and savoury depth to the sauce.
Worcestershire sauce
Adds savoury, tangy depth to the cooking liquid.
Dark brown sugar
Adds sweetness and caramel notes, and helps the sauce brown and thicken as it reduces.

The step that matters

Searing the chops until browned and slightly charred. Browning creates flavourful Maillard compounds on the surface. Skipping or rushing this step leaves the chops pale and bland, since slow cooking in liquid does not brown meat.
