Ingredients

Directions

Prepare the filling

  1. Heat the skillet over medium heat and add half the butter, tilting the skillet in a circular motion to coat evenly.

  2. Add paprika, mushrooms, and onions and sauté until lightly browned.

  3. Add spinach and toss for 30 seconds, or until slightly wilted but still crunchy.

  4. Remove the vegetables from the heat and set aside.

Make the omelet

  1. In a large bowl, whisk the eggs, salt, pepper, nutmeg, and milk until even and glossy.

  2. Add the remaining half of the oil or butter to the pan over medium heat and coat the pan evenly.

  3. Lower the heat.

  4. Pour the egg mixture into the skillet, swirling the pan to ensure an even, creamy layer of eggs.

  5. Heat until the eggs have begun to set, with some fluff on top.

  6. Top the egg layer with the vegetables, distributing the vegetables evenly.

  7. Sprinkle the cheese evenly on top.

  8. Gently push the edges of the omelet half a centimeter toward the center of the skillet with two spatulas, making sure not to break it.

  9. Turn the heat off.

  10. Use the spatulas to carefully lift/pull half the omelet off the skillet and fold it over the other half.

  11. Carefully move the entire omelet onto a plate and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into the structure of the omelet and give it a creamy, tender body.
Milk
Adds moisture and softness, keeping the eggs tender rather than dry.
Baby bella mushrooms
Release moisture and brown, adding savory depth and a meaty texture.
Red onion
Softens and turns sweet as it cooks, adding aroma and mild sweetness.
Aged cheddar cheese
Melts into the filling, adding fat, richness and savory flavor.
Fresh spinach
Wilts quickly, adding color, a mild green flavor and a little moisture.

The step that matters

Cook the eggs over gentle heat until just set. High heat or overcooking makes egg proteins tighten and squeeze out water, producing a rubbery, dry omelet. Lowering the heat and removing the pan from the burner while the top is still slightly moist keeps the layer tender and creamy.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (egg, pepper, milk, butter, spinach, mushroom, onion):

  1. Garlicfits better
  2. Parsleyfits about as well
  3. Thymefits about as well
  4. Nutmegthe original

Fit is the average pairing score against egg, pepper, milk, butter, spinach, mushroom, onion. Candidates are from the same food group and used in at least 100 recipes.
