Why it works: Onion and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓

Ingredients

Directions

Prepare the filling

  1. Heat 2 tbsp olive oil in a large skillet over medium‑high heat.

  2. Add garlic and onion, and cook until garlic is golden.

  3. Combine cheeses, bacon, cooked onion and garlic, and butter. Set aside.

Form and season the patties

  1. Form meat into 8 equal patties.

  2. Make an indentation into the middle of each patty and place a dollop of cheese mixture into the dent.

  3. Place one patty on top of each other, stuffing side down, and push down until patty is about ¾ inch thick. Set aside while you heat your trusty charcoal grill (not with that solvent stuff).

  4. Brush patties with olive oil and season liberally on both sides with salt and freshly ground black pepper.

Grill and serve

  1. Set down on grill and cook, turning often, until instant‑read thermometer inserted into the meat, not the stuffing, reads desired temperature (at least 160°F).

  2. Brush the cut side of each bun with melted butter.

  3. Place a patty on top of a bottom half of a bun and top with a top half of a bun. Serve warm.

What each ingredient does

Ground chuck
Its fat carries flavor and keeps the patties juicy as they cook.
Pepper jack cheese
Melts into the center of the patty, adding creamy richness and a mild heat.
Monterey jack cheese
Melts into a gooey filling that binds the stuffing together.
Bacon
Adds smoky, salty fat that complements the beef and cheese.
Onion
Softens and sweetens as it cooks, adding savory depth to the filling.
Garlic
Browns in the oil to add aroma and a sharp savory note.

The step that matters

Pull the patties off the grill at the right temperature. The thermometer must sit in the meat, not the cheese filling, because the filling can read differently and lead to undercooked or overcooked beef. Turning often promotes even cooking and browning.

Swap the clove

How well each one fits the dish's main ingredients (pepper, cheese, onion, garlic, olive, butter):

  1. Thymefits better
  2. Parsleyfits better
  3. Cuminfits better
  4. Clovethe original

Fit is the average pairing score against pepper, cheese, onion, garlic, olive, butter. Candidates are from the same food group and used in at least 100 recipes.
