  2. In another bowl, whisk together the milk, yogurt, egg, and melted butter or olive oil.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn meal
Provides the coarse, grainy texture and characteristic corn flavor of the bread.
Flour
Forms the gluten network that gives the cornbread its structure.
Baking powder
Releases gas in the batter to lift and open the crumb as it bakes.
Baking soda
Reacts with the acidic yogurt and milk to add rising and help browning.
Egg
Binds the batter and adds structure as it sets in the oven.
Plain yogurt
Adds moisture and tenderness, and its acidity activates the baking soda.

The step that matters

Stir the batter until just combined. Overmixing once the flour meets the liquid develops excess gluten, making the cornbread tough and dense. Stop as soon as no dry streaks remain, then bake right away before the leavening loses its lift.
