Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, cooking through in the hot shortening.
Cornmeal
Forms a crisp, golden coating that browns during frying.
Vegetable shortening
Conducts heat around the chicken, cooking it and crisping the coating.
Lemon juice
Moistens the chicken so the seasoning and coating adhere to it.
Smoked paprika
Adds smoky flavour and colour to the seasoned coating.

The step that matters

Holding the shortening at 350°F. If the oil runs too hot, the coating browns or burns before the chicken cooks through; if too cool, the chicken absorbs excess fat and turns greasy. Watching the temperature keeps the crust crisp and the inside cooked.

Swap the lemon
