What each ingredient does

Ripe plantains
Sweet, soft flesh that caramelises and browns on the surface as it bakes.
Butter or margarine
Fat that carries heat to the plantain surface and helps it brown.
Smoked sausages
Savoury, smoky flavour that seasons the dish as the fat renders.
Vegetable confetti
Adds fresh crunch, colour and moisture that contrasts with the soft, baked plantain.
Olive oil
Fat that coats the vegetables and carries their flavour.
Vinegar
Adds acidity that brightens the vegetables and balances the sweet plantain.

The step that matters

Peel the plantains and smear them with butter. Ripe plantains are soft and sugar-rich, so they can scorch or dry out quickly. An even coat of fat helps them brown gently and stay moist inside rather than burning at the edges.

Swap the carrot

How well each one fits the dish's main ingredients (butter, tomato, onion, pepper, olive, vinegar):

  1. Capsicumfits better
  2. Potatofits better
  3. Cucumberfits better
  4. Carrotthe original

Fit is the average pairing score against butter, tomato, onion, pepper, olive, vinegar. Candidates are from the same food group and used in at least 100 recipes.
