What each ingredient does
- Risotto rice
- Its starch releases slowly during stirring, creating the creamy, starchy texture of the dish.
- White wine
- Adds acidity and aroma that balance the richness of the butter, cheese and cream.
- Chicken broth or vegetable broth
- Supplies the liquid that the rice absorbs as it cooks, providing moisture and savory flavor.
- Parmesan, romano or asiago cheese
- Adds savory, salty depth and helps make the finished risotto creamy and rich.
- Dry porcini mushrooms
- Contribute concentrated, earthy umami flavor that gives the risotto its mushroom character.
- Unsalted butter
- Adds fat and richness, helping the rice turn glossy and silky when finished.
The step that matters
Adding the liquid and stirring during the simmer. Rice needs to absorb liquid gradually while being stirred, which releases its surface starch. Adding too much liquid at once or stopping the stirring can leave the grains unevenly cooked and the texture gluey or loose.
