Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

Prepare

  1. Combine ground beef with 1 egg, 1 cup of rice, salt, and pepper.

  2. Mix thoroughly and form into meatballs the size of a ping-pong ball (4 cm).

  3. Coat each ball with a layer of white flour.

Cook the soup

  1. In a large pot, sauté diced onion in butter, margarine, or oil. Add 2 litres of water and bring to a boil.

  2. Drop each meatball into the boiling water.

  3. After 30 minutes, add the second cup of rice to the soup. Boil for 15 more minutes, then remove the pot from the heat.

Finish and serve

  1. In a large bowl, beat one egg white with a little water into a foam; add lemon juice to stabilize. Continue whisking as you add the egg yolk. This mixture is called avgolemono and thickens soups.

  2. Slowly pour 1 cup of the hot soup into the avgolemono while whisking, then pour the mixture back into the pot, mixing with the soup.

  3. Serve hot.

What each ingredient does

Ground beef
Forms the main body of the meatballs and provides the meaty flavour and protein that sets when cooked.
Rice
Absorbs liquid as it cooks, giving the soup body and a thicker texture.
Eggs
Bind the meatballs together, and the yolk and white thicken the soup as avgolemono.
Lemon juice
Adds acidity that brightens the soup and helps stabilize the egg foam.
Onion
Sautéed to build sweetness and a savoury aroma in the broth base.
Butter or olive oil
Carries flavour from the onion and adds richness to the soup base.

The step that matters

Tempering the avgolemono. Eggs curdle if exposed to very hot liquid too quickly. Slowly whisking in hot soup raises the egg mixture's temperature gradually, so it thickens smoothly instead of scrambling.

Swap the onion

How well each one fits the dish's main ingredients (beef, rice, egg, butter, lemon, pepper, flour):
