Ingredients

  • Potatoes , diced
  • Sweet potatoes , diced
  • Green bell pepper , chopped
  • Red bell pepper , chopped
  • Onions , chopped
  • Medium tomatoes , chopped
  • Saltwater fish (e.g. tautog, cod , bluefish, or sea bass), cut into small pieces
  • Scallions , sliced
  • Fresh parsley , chopped

Directions

Bring a medium pot of water to a boil . Add the white and sweet potatoes. Boil for approximately 15 minutes or until they are partially cooked. Drain.

Heat some oil over low heat in a separate pot. Add the onions, bell peppers, and tomatoes. Cook until softened.

Add the fish, and continue sautéing .

Add the drained potatoes, and add enough water to make a soup. Simmer until the fish and potatoes are fully cooked.

Add the parsley and scallions, and serve.
