Why it works: Wheat and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 4,373 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Whole Wheat Flour Tortillas
Serves 8Ingredients
Directions
Make the dough
Mix whole wheat flour, salt, and baking powder together in a large bowl.
Add hot water and vegetable oil.
Stir well with a spoon until a dough begins to form.
When dough is cool enough to handle, turn onto a clean counter and knead dough by hand by continuously folding and pressing the dough onto itself until all the flour comes together into a ball.
Knead for about 5 minutes or until the dough is smooth.
Divide dough into 8 even pieces.
Form each piece into a ball.
Roll and cook
Roll each ball into a very thin tortilla, about 20 cm (8 inches).
Dust each tortilla with flour to prevent sticking to the counter and rolling pin.
Heat a large pan or skillet over high heat.
Cook a tortilla for 20 seconds.
Flip the tortilla.
Cook for an additional 15 to 20 seconds or until lightly browned.
Remove from the pan and wrap in a clean dish towel to cool.

What each ingredient does
- Whole wheat flour
- Forms the structure of the dough, and its gluten network gives the tortillas their chewy body.
- Baking powder
- Releases gas as it reacts, helping the tortillas puff and stay tender.
- Hot water
- Hydrates the flour so the dough comes together and becomes pliable.
- Vegetable oil
- Adds fat that keeps the tortillas soft and moist and makes them easier to roll.
The step that matters
Cook over high heat for a short time. Brief cooking over high heat sets the outside quickly while trapping steam inside, which helps the tortilla puff and stay soft. Overcooking dries the tortilla and makes it brittle.
