What each ingredient does

Pork loin chops
Provides the main protein, which browns on the outside while cooking through inside.
Apples
Soften while cooking and add sweetness that balances the savory pork.
Chicken or vegetable broth
Adds moisture and forms the liquid base of the pan sauce.
Cornstarch
Thickens the broth mixture into a glossy sauce that clings to the apples and pork.
Dijon mustard
Adds sharpness that cuts through the sweetness of the apples and the richness of the pork.
Garlic
Adds aroma and pungency that mellows as it cooks.

The step that matters

Checking the pork's internal temperature. Pork loin chops are lean, so they dry out quickly once past the target temperature. Checking with a thermometer at 71 °C (160 °F) avoids both undercooking and overcooking.
