What each ingredient does

Sweet potatoes
Form the main body of the chips, becoming soft and tender inside as they roast.
Vegetable oil
Coats the wedges so they roast evenly and take on a golden surface.
Tomato purée
Adds concentrated tomato flavour and body to the salsa.

The step that matters

Turning the wedges after 20 minutes. Turning the wedges exposes all sides to the hot tin and air, so they brown and cook evenly rather than scorching on one side or staying pale and soft underneath.
