Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter, and whipped whites add lift and a light, airy crumb.
Flour
Provides the structure that holds the waffle together as it sets.
Baking powder
Releases gas in the batter, helping the waffles rise and turn light.
Butter
Adds fat for richness, tenderness and browning on the iron.
Milk
Provides the liquid that hydrates the flour and forms the batter.

The step that matters

Folding in the stiff egg whites. Whites are added just before cooking so their trapped air is not lost. Deflated whites give a denser waffle with less lift.
