Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and a light crumb.
Grated almonds
Provide body and moisture, giving the cake a tender, dense texture.
Flour
Adds a small amount of structure so the cake holds together when sliced.
Baking powder
Releases gas in the batter, helping the cake rise and become lighter.
Dates
Add moisture and natural sweetness, along with a soft, chewy texture.
Sugar
Adds sweetness and helps tenderize the crumb.

The step that matters

Add the dates and the beaten whites of the six eggs.. Beaten egg whites hold air that gives the cake lift. Folding them in gently keeps that air from collapsing, while stirring too hard deflates the batter and makes the cake denser.

Swap the dates

How well each one fits the dish's main ingredients (sugar, almond, egg, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better
  4. Datesthe original

Fit is the average pairing score against sugar, almond, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
