Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Raised Doughnuts
Ingredients
Directions
Mix one pint bread sponge, one pint warm water, two eggs, one cup sugar, one pinch of salt and three teaspoonfuls of lard, mixing as for bread.
Sift two heaping teaspoonfuls baking powder with one quart flour two or three times.
Beat two eggs with one coffee cup of sugar, add a teacupful of new milk, and add a teaspoonful melted butter if the milk is not very rich.
Flavor with nutmeg, mix everything together, and fry in hot lard mixed with cottolene.
Put one cupful granulated sugar and four eggs in a mixing bowl, then add one and one-half cups rich sweet milk.
Sift three cupfuls flour with three teaspoonfuls baking powder three times, add one-quarter teaspoonful salt and one tablespoonful melted butter.
Add enough flour to make a soft dough, roll soft without kneading, cut into any desired shape, and cook in hot lard.
Beat one and one-half cupfuls sugar, one and one-half cupfuls milk, two eggs, about one tablespoonful shortening, and one-half teaspoonful soda if using sour milk, or baking powder if sweet, with nutmeg.
Beat the mixture before adding two and one-half cupfuls flour.
Combine two eggs, two cups sugar, two cups sour milk, salt and spices to taste, and enough flour to mix stiff.
Fry in hot lard.
Cream one cup sugar and two eggs together, then add one tablespoon sour cream and one cup sour milk.
Dissolve one teaspoon of soda in a tablespoon of boiling water and add it, along with salt and nutmeg.
Add flour to thicken like cream biscuits, roll the dough one-half inch thick, and fry in hot lard to light brown.
Mix one egg, one cup sugar, butter the size of a walnut, one and one-half cupfuls milk, two heaping teaspoons baking powder, one quart flour, and vanilla or nutmeg.
Stir eggs and sugar together, add melted butter, then add sour milk into which soda has been stirred.
Add one cup flour into which baking powder has been stirred, then add the sweet milk alternately with flour until the dough is the right consistency to roll.
Fry in hot fat.
Beat three eggs, one cup sugar, one and one-half cups sour milk, nutmeg and one-half teaspoonful soda together after dissolving the soda in a little boiling water.
Add flour and mix as soft as possible to roll out, then fry in lard until brown.
Combine one cup sugar, three well beaten eggs, one tablespoon melted lard, nutmeg, and one cupful sour milk into which one teaspoonful dissolved soda has been put.
Add flour enough to make a batter thick enough to roll out well, cut into desired shape, and cook in hot lard.
Combine one and one-half cupfuls sweet milk, four cupfuls sifted flour, three teaspoonfuls baking powder, two well beaten eggs, two cupfuls sugar, one tablespoonful hot lard, and nutmeg or lemon.
Roll soft, cut into any desired shape, drop into hot lard, and drain well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Bind the dough and add richness and structure to the crumb.
- Baking powder
- Produces gas for rising, giving the doughnuts their lightness.
- Soda
- Reacts with sour milk to produce gas, helping the dough rise.
- Sour milk
- Its acidity activates the soda and adds tenderness to the dough.
- Flour
- Forms the dough structure that holds the shape during frying.
- Sugar
- Adds sweetness and helps the fried surface brown.
The step that matters
Fry in hot lard. If the fat is not hot enough, the doughnuts absorb grease and turn heavy and oily instead of browning quickly and sealing on the outside.
Swap the nutmeg
How well each one fits the dish's main ingredients (bread, sugar, flour, milk, cream, butter, egg):
- Nutmegthe original
- Cinnamonfits about as well
- Capersfits less well
- Parsleyfits less well
Fit is the average pairing score against bread, sugar, flour, milk, cream, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
