Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped with air give the baked dish lift and a light, airy structure.
Bread crumbs
Soaked in boiling water, they thicken the mixture and give it a soft, moist body.
Milk
Adds liquid that keeps the baked mixture moist and gives the yolks a smoother texture.

The step that matters

Stir in the stiffly beaten whites. Whites hold air only when whipped stiff, and that air is what lifts the dish. Stir them in gently so the mixture keeps its volume rather than deflating in the bowl.
