Salmon Loaf

Ingredients

Directions

Prepare the loaf

  1. Remove bones and flake the salmon.

  2. Add bread crumbs, butter, salt, pepper, and egg.

  3. Mix well and add milk slowly.

  4. Mold into a loaf.

Bake and serve

  1. Bake in a medium oven for one-half hour.

  2. Add a little chopped onion if desired.

  3. If steamed instead of baked, it makes a more moist loaf but is not so easy to keep in shape for serving.

  4. Serve hot on a bed of lettuce or parsley.

What each ingredient does

Soft stale bread
Bread crumbs absorb liquid and give the loaf structure that holds the fish together.
Egg
Egg binds the flaked salmon and crumbs, setting as it cooks to hold the loaf's shape.
Milk
Milk adds moisture, keeping the loaf tender as the bread swells and the egg sets.
Butter
Butter adds fat, enriching the flavour and softening the texture of the loaf.

The step that matters

Add the milk slowly while mixing. Adding milk gradually lets the bread crumbs absorb it evenly, so the mixture stays moist but still firm enough to shape. A mixture that is too wet slumps and falls apart during baking.
