What each ingredient does

Bread
Soaked in milk and crumbled, it absorbs liquid and gives the mixture body and soft texture.
Milk
Soaks into the bread, adding moisture so the mixture stays tender as it bakes.
Eggs
Bind the mixture and set with heat, holding it together when baked.

The step that matters

Bake until cooked. Egg proteins set as they heat. Overbaking makes the mixture dry and rubbery, while underbaking leaves the centre loose, so test with a straw as you would a cake.
