Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal (in the method)
Provides the coarse, grainy body and characteristic corn flavor of the cake.
Flour
Adds structure so the batter holds its shape as it bakes.
Eggs
Yolks add richness and help bind the batter and set its crumb.
Buttermilk
Adds moisture and tang that helps the batter stay tender.
Baking powder
Releases gas in the batter so the cake rises in the oven.
Baking soda
Reacts with the acidic buttermilk to add lift and aid browning.
