Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Carries the cooked onion and carrot flavour and forms the fat base for the sauce.
Flour
Thickens the liquid into a smooth sauce when cooked with the butter.
Chicken or veal stock
Supplies the liquid that the flour-butter base thickens into the sauce.
Cream
Adds richness and a smoother, silkier texture to the finished sauce.

The step that matters

Gradually add the stock and cream. Adding liquid slowly to the hot flour and butter mixture lets starch granules disperse evenly, which prevents lumps and gives a smooth, thickened sauce.
