What each ingredient does

Gelatine (in the method)
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar (in the method)
Adds sweetness and balances the bitterness of the coffee.
Strong coffee (in the method)
Provides the main flavour and colour of the jelly.

The step that matters

Dissolving the gelatine fully. Gelatine must be completely dissolved in the hot liquid before straining and moulding. Any undissolved granules will not set evenly, leaving a grainy or weak texture.
