Second Day of Roast Beef

Ingredients

Directions

Prepare the beef

  1. Cut the beef into slices, removing most of the fat.

  2. Rub each slice in flour.

Layer and bake

  1. Place the slices in layers in a covered earthen dish, alternating with layers of fresh or canned Old Reliable tomatoes.

  2. Sprinkle each layer with pepper, salt, summer savory, and sweet marjoram — curry powder if desired.

  3. Turn cold gravy over the top with just enough water to cover the meat.

  4. Add two or three whole cloves.

  5. Bake three or four hours, adding flour if the gravy is not thick enough.

  6. About twenty minutes before serving, remove the cover and brown.

What each ingredient does

Beef
Forms the main body of the dish and supplies the meat that becomes tender during long baking.
Tomatoes (in the method)
Add moisture and acidity that help flavour the meat and gravy during the long bake.
Flour (in the method)
Thickens the gravy as it cooks, and lightly coats the meat slices.

The step that matters

Adding flour to the gravy during baking. Flour thickens the liquid only as it heats and is stirred in; if the gravy stays thin, the sauce will not coat the meat. Checking consistency during the long bake keeps it from becoming watery.

Swap the clove

How well each one fits the dish's main ingredients (beef, butter, egg, milk, pepper):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Clovethe original

Fit is the average pairing score against beef, butter, egg, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
