What each ingredient does

Sugar
Sweetens the syrup and helps preserve the fruit by lowering its available water.

The step that matters

Cooking until the fruit is clear. The fruit must cook long enough to become clear and tender as it absorbs the syrup, but overcooking can make it break down and turn mushy.
