What each ingredient does

Papaya pulp (in the method)
Supplies the main fruit flavor, color, and body to the frozen sherbet.
Sugar (in the method)
Adds sweetness and keeps the frozen texture softer rather than rock-hard.
Gelatin
Sets the mixture and gives it a smoother, less icy texture when frozen.
Lemon juice (in the method)
Adds acidity that brightens the papaya flavor and balances the sweetness.

The step that matters

Add the softened gelatin to the hot mixture. Gelatin must dissolve fully and spread evenly through the hot liquid. If it is added lumpy or left undissolved, it can set in clumps instead of giving the sherbet a smooth, even texture.
