Either steam or boil a chicken. Let it cool in its own liquor, when cold remove the meat from the bones, and cut it into dice; do not chop it. Also, cut some celery into small })ieces until you have just as much celery as chicken. This is one of the places where a pair of scissors for the kitchen is very useful. When it is time to serve the salad, add mayon- naise dressing, mixing all very thoroughly. Reserve some of the dressing. Serve on lettuce leaves, adding a spoonful of thick mayonnaise to the salad on each lettuce leaf.
