Directions
Mix one-half pint of cold water, one tablespoonful of lard, one quart of flour and teaspoonful of salt. Rub the lard in the flour, and add water and salt. This makes a very stiff dough. Put it on a board and beat it for thirty minutes. A wooden mallet is the best thing to beat it with. At the end of that time the dough will be very elastic. Pull off pieces and form into l)alls about the size of a walnut, flatten slightly and prick with a fork. They must never be cut out with a cutter. Bake in a quick oven until slightly brown. These are the real old-fasbioned Maryland biscuits, though a very old cook book substitutes cream for water.
