Mix, bake and serve

What each ingredient does

Eggs
Set the custard and give the omelet its structure and richness, while whipped whites add lift.
Baker's bread
Soaks up the milk mixture and forms the body of the dish.
Milk (in the method)
Supplies the liquid that moistens the bread and forms the custard with the eggs.
Butter
Adds fat for richness and flavor.

The step that matters

Folding in the stiffly beaten egg whites. Whipped whites trap air that gives the baked omelet its lift. Overmixing or stirring vigorously deflates the foam, so the dish bakes flatter and denser. Fold gently with a spatula until just combined.
