Why it works: Milk and lemon are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 19,053 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Lemon Toast
Ingredients
Directions
Prepare the toast
Beat the yolks of six eggs and add three cups of sweet milk.
Take baker's bread that is not too stale and cut it into slices.
Dip the slices into the milk and egg mixture.
Lay the slices into a pan with sufficient melted butter hot enough to fry until a nice delicate brown.
Make the sauce and serve
Beat the whites of the six eggs to a froth, adding a large cup of white sugar.
Add the juice of two lemons, heat well, and add two cups of boiling water.
Serve the sauce over the toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Yolks enrich the milk dip and whites, beaten to a froth, give the sauce a light, airy body.
- Sweet milk
- Soaks into the bread so the slices soften and then brown richly in the pan.
- White sugar
- Sweetens the frothed egg whites and balances the sharpness of the lemon.
- Lemons
- Juice adds acidity and bright aroma that cut through the sweetness of the sauce.
The step that matters
Frying the soaked bread. The butter must be hot enough to brown the bread quickly. If the pan is too cool, the soaked slices absorb fat, turn greasy and soggy rather than developing a delicate golden crust.
