What each ingredient does

Rice
Softens as it simmers in milk, forming the body that holds the charlotte together.
Milk
Cooks with the rice to make a soft, creamy base that sets as it cools.
Whipped cream
Adds fat and air, giving a lighter, richer texture to the rice mixture.

The step that matters

Let the rice cool fully before mixing in the cream. Warm rice would deflate the whipped cream and thin the mixture. Cooling lets the starch firm up so the cream stays airy and the charlotte can hold its shape when turned out.
