Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs give the cake its structure and lift as they trap air.
Sugar
Sweetens the cake and helps give it a tender crumb.
Flour
Forms the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the layers rise.
Milk
Adds moisture and, once boiled, thickens into the filling.

The step that matters

Boil till it thickens, stirring constantly. The milk mixture thickens as starch and proteins set with heat, and it can scorch or lump if not stirred constantly over heat.
