Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bran
Provides the bulk and fiber that give the loaf its dense, hearty texture.
Flour
Supplies gluten-forming proteins and starch that give the loaf structure.
Sour milk
Adds moisture and acidity that react with the baking soda to help the loaf rise.
Baking soda
Reacts with the acidic sour milk to produce carbon dioxide, leavening the bread.
Molasses
Adds sweetness, moisture, and deep color to the crumb and crust.

The step that matters

Dissolving the baking soda in milk before stirring it in. Baking soda must be fully dissolved and evenly distributed so it reacts with the acidic sour milk throughout the batter. Unevenly mixed soda can leave bitter pockets and uneven rising.
