Directions
One cup dried split peas, two and one-half quarts cold water, one pint milk, one-half onion, three tablespoons but- ter, two tablespoons flour, one and one-half teaspoons salt, one-eighth teaspoon pepper, two inch cube fat salt pork. Pick over peas and soak several hours, drain. Add cold water, pork, and onion. Simmer three or four hours or until soft ; rub through a sieve. Add butter and flour cooked together, salt and pepper.
