Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour (in the method)
Starch that gelatinizes and sets with heat, giving the dough its structure.
Eggs
Proteins set during baking and add moisture, so the puffs rise and hold their shape.
Butter
Fat that adds richness and tenderness to the dough.
Milk
Liquid and milk proteins that add moisture and body to the cooked filling.
Sugar
Adds sweetness and helps the filling brown lightly.

The step that matters

Stir in the eggs alternately. Eggs must be worked into the cooled dough gradually. This gives a smooth, glossy dough that holds its shape. Adding too much egg at once makes the dough loose, so the puffs may not rise well.
