MOULDED SALMON WITH CUCUMBER SAUCE— One can salmon, one-half tablespoon salt, one and one-half tablespoons sugar, one-half tablespoon flour, three-fourths tablespoon gelatine dis- solved in two tablespoons cold Water, one-half teaspoon paprika, one teaspoon dry mustard, yolks of two eggs, one and one-half tablespoons melted butter, three-fourths cup sweet cream, one fourth cup vinegar. Remove salmon from bone, rinse thoroughly with hot water, drain and separate in flakes. Mix dry ingredients, add yolks, butter, cream, vinegar and cook in double boiler until mixture thickens, then add soaked gelatine, salmon flakes, mix thoroughly and fill individual molds, chill and serve with following sauce : Beat one bottle whipping cream until stiff, add one-fourth teaspoon salt, paprika to season, then gradually two tablespoons vinegar and last one cucumber chopped and well drained.
