Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; cooked through and crisped on the outside once fried.
Egg
Binds the bread crumb coating so it adheres to the sweetbreads while frying.
Bread crumbs
Form a crisp, browned coating that protects the sweetbreads during frying.

The step that matters

Frying until a nice brown. The coating browns through Maillard reactions in hot fat, which gives flavor and crispness. If the fat is not hot enough, the crumbs absorb oil and turn greasy before they brown.
