Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Bind the batter and add structure and moisture as they set in the oven.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Flour
Provides the structure that sets the batter and holds the raisins and nuts.
Seeded raisins
Add pockets of moisture and chewy sweetness throughout the cake.

The step that matters

Stiffening the dough with flour. Flour must be added until the dough is stiff enough to roll. Too little leaves it wet and spreading, while too much makes the cake dense and dry, since flour starch absorbs liquid and sets as it bakes.

Swap the nuts

How well each one fits the dish's main ingredients (butter, milk, raisin, egg, flour):

  1. Almondfits better
  2. Chestnutfits better
  3. Pistachiofits better
  4. Nutsthe original

Fit is the average pairing score against butter, milk, raisin, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
