What each ingredient does

Eggs
Whites beaten into the batter add air and lift, giving a lighter crumb.
Butter
Melted butter adds fat, which softens the crumb and adds richness.
Sweet milk
Milk supplies the liquid that hydrates the flour and forms the batter.
Sugar
Sugar adds sweetness and helps the crust brown during baking.
Cream of tartar
As an acid, it reacts with soda to release gas that makes the bread rise.
Soda
Soda reacts with the acid in the batter to produce gas that leavens the bread.

The step that matters

Adding the soda and beaten egg whites. Soda reacts with the acid in the batter as soon as it is wet, so it should go in just before baking. The beaten whites are added last and gently so their trapped air is not lost before the batter sets in the oven.
