Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the custard as they heat and add richness.
Isinglass
A gelatin-like setting agent that firms the cream as it cools.
Whipped cream
Adds air and fat for a light, creamy texture.
Milk
Forms the liquid base of the custard.
Sugar
Sweetens the custard.

The step that matters

Add the whipped cream only when the custard is cold. Warm custard would melt and deflate the whipped cream and weaken the isinglass set, leaving a looser, less airy texture.
