To Make an Old Fowl Tender
Ingredients
Directions
Put one tablespoonful of lemon juice into the water in which it is boiled. Strong vinegar may be used but is not so good. Citric acid is a better substitute — a lump the size of a large pea.

Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures. See the original page.
