Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sauce and, creamed with butter, gives it a smooth, light base.
Butter
Adds fat for richness and a silky, mellow mouthfeel.
Flour
Forms a starch with the boiling water, thickening the sauce as it cooks.

The step that matters

Pouring the sauce in slowly while stirring continually. Flour starch thickens when heated in liquid and can clump if added too quickly. Pouring slowly while stirring spreads the starch evenly, giving a smooth sauce at the right consistency.
