Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and cooking to thicken the milk and give the pudding its body.
Egg yolks
Thicken the custard as they cook and add richness.
Milk
Forms the liquid base that the tapioca and eggs thicken into a pudding.
Sugar
Sweetens the pudding and the topping.
Raisins
Add sweetness and chewy texture throughout the pudding.
Egg whites
Beaten and spread on top, they add a light, airy topping.

The step that matters

Adding the eggs to the boiling milk. Eggs can scramble when they meet very hot liquid. Keeping the heat moderate and stirring constantly lets the yolks thicken the pudding smoothly instead of setting in lumps.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, milk, egg):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinthe original
  4. Lemonfits about as well

Fit is the average pairing score against sugar, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
