What each ingredient does

Tomatoes
Provides the bulk, body and fruity base of the ketchup.
Vinegar
Adds sharp acidity that balances the sweetness of the tomatoes.
Red pepper
Adds heat and pungency to the sauce.
Black pepper
Adds mild heat and a warm, sharp aroma.

The step that matters

Boil slowly for four hours. Slow simmering lets water evaporate gradually, thickening the sauce and concentrating its flavors. Too much heat can scorch the tomatoes on the bottom of the pot, so the mixture should be stirred and kept at a gentle boil.
