Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped to a stiff froth, they trap air and give the cakes lift and a light structure.
Butter
Adds fat for richness and a tender, melting texture.
Sugar
Adds sweetness and helps the cakes brown as they bake.
Almonds
Contribute nutty flavor and body to the filling.
Macaroons
Provide almond sweetness and a moist, tender crumb to the filling.

The step that matters

Folding in the beaten egg whites. The whites hold the air that lifts the cakes. Stirring them in vigorously knocks out that air, leaving dense cakes, so they should be mixed in gently and evenly.

Swap the almond

How well each one fits the dish's main ingredients (sugar, butter, egg):

  1. Almondthe original
  2. Pecansfits about as well
  3. Filbertfits less well
