What each ingredient does

Sugar
Dissolves into the water to form the syrup and provides its sweetness.
Egg white
Coagulates when heated and gathers impurities so they can be skimmed off, leaving the syrup clear.

The step that matters

Skimming while the mixture boils. As the egg white heats, it coagulates and carries impurities to the surface as foam. Skimming it off thoroughly is what clears the syrup, so leftover foam left in the pot would cloud the result.
