Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Adds fat and rich flavor, and forms the smooth base with the flour.
- Flour
- Thickens the sauce as its starch swells in the hot butter and water.
- Lemon juice (in the method)
- Adds acidity that brightens the rich butter flavor.
The step that matters
Adding the boiling water slowly. Flour must be fully blended into the melted butter before liquid goes in. Adding the hot water slowly while stirring lets the starch disperse evenly, which prevents lumps and gives a smooth, thickened sauce.
