Make a foundation as in Vanilla Ice Cream, No. 1. Sweeten the sliced peaches with one cup of the sugar and mash through a fine sieve; add the half cup of sugar to the cream. Mix the cream with the founda- tion and turn into the freezer. When the mixture begins to set, add the peaches.
Strawberry cream is made in the same way, using same proportions.
