What each ingredient does

Marshmallows (in the method)
Melt to form the base that gives the icing its sticky, glossy body.
Orange juice (in the method)
Adds liquid and flavor, loosening the melted marshmallow into a spreadable icing.
Chopped fruits
Add texture and fruity sweetness through the icing.

The step that matters

Beat until cold. Beating while the melted marshmallow cools lets it thicken and turn spreadable; spreading while still hot makes it runny and it may slide off the cake.
