What each ingredient does

Cream
Whipped to a light structure that gives the dessert its airy, creamy body.
Eggs
Thicken the mixture as they set, adding structure and richness.
Gelatine (in the method)
Sets the liquid filling so it holds its shape when chilled.
Milk
Forms the liquid base that dissolves the gelatine and carries the flavour.
Sugar
Adds sweetness and softens the set texture of the filling.

The step that matters

Add the well-beaten eggs as the cream stiffens. Eggs thicken and enrich the filling when gently heated or folded in while the cream is partly whipped. Adding them too early or to a warm, runny base can curdle the mixture or make it thin, so the eggs should go in gradually while the cream is still stiffening.

Swap the orange

How well each one fits the dish's main ingredients (sugar, flour, milk, vanilla, cream, cinnamon, tea):

  1. Figfits better
  2. Raisinfits better
  3. Peachfits better
  4. Orangethe original

Fit is the average pairing score against sugar, flour, milk, vanilla, cream, cinnamon, tea. Candidates are from the same food group and used in at least 100 recipes.
